Soup for the soul...

So I feel like it`s been forever since my last post.
In the past few weeks we`ve had 5 birthday parties, 2 of which were surprises! A Halloween party, our anniversary, lots of renovations in our casa, working on the Prepared Pretty business plan,and alot of sick babies, including Mr.R. With all this going on it`s been hard to find time to breathe, let alone blog, but the one thing that we always have time for no matter what, is food!!
 I have so much to share, but for today a little recipe that warms my heart and my belly!
My all time favourite soup is cream of broccoli. I had it in a little Mexican restaurant once, and i still dream about that soup.I`ve tried several different variations, and was never really able to recreate that first soup that i fell in love with so much...until yesterday!
When the cold weather rolls around, i crave soup, and yesterday, i wanted broccoli soup!So i gathered my ingredients,and in 30 minutes, i had the best soup ever!!

what i used:
4 broccoli stocks
6 cups of water
3 bouillon cubes (vegetable or chicken)
1/4 cup cream
1 cup mozzarella, grated
pepper and salt to taste

Depending on how big your broccoli stocks are is how much water you need, basically just enough water to cover the broccoli, and the bouillon cubes are usually 1 per 2 cups of water. Or you could just use a liquid stock instead.

 
Clean and cut the broccoli, add to the water and the bouillon cubes and bring to a boil. Lower to a medium heat and let boil about 10 minutes, or until broccoli is very soft.In a blender, or with a hand blender, puree the soup.(since M broke my blender, i used the food processor)
Pour it back into the pot and on low heat, add the cream and the cheese. simmer for 5 minutes while stirring so the cheese can melt and won`t clump.


Et voila!! serve and add salt and pepper if you like!!
The kids really liked this soup, and i had 2 bowls, the first one counts as an appetizer!!There was hardly any left, just enough for my lunch today, I can`t wait. This soup really hits the spot and makes me happy just thinking about it!
