Quality time...update

Yesterday I had my heart sister over. As if I didn`t have enough sisters already, we adopted a couple along the way as well!It had been awhile since we hung out, and since she shares my joy of baking(unlike my REAL sisters, who look like lost sheep in the kitchen), I asked her if she would like to do a baking day. Today we have a "surprise" party for some family members, and I volunteered to make cupcakes. Mind you our family is huge and a small gathering usually includes about 30 people, so for this one, we needed alot of cupcakes!!Total count,72!

And I also had workshop lunches to do.

Today's menu, chicken sandwiches, with a fruit salad, and I finally made those lime squares I have been dreaming of.

So the color didnt't exactly come out the same, but it still looks delicious(plus my photography skills are less then desirable!!)But they are quite scrumptious, and I will definitely be making these again!! Also the kids didn't really care for them, so that means more for mama!!!

Here is the recipe:
Ingredients:
for crust—
1 cup flour
1/4 cup powdered sugar
1/4 tsp salt
1 stick unsalted butter, cold
for creamy lime filling—
2/3 cup fresh lime juice (from about 6 limes)
1 1/4 cup sugar
1/4 cup flour
4 eggs
2 tsp lime zest
green food coloring (enough to produce desired green color)
powdered sugar for serving
Directions:
Preheat oven to 350.
To make the crust, combine the confectioners sugar, flour and sea salt in a large bowl. Cut in the cold butter and work with your fingers until the mixture resembles cornmeal. Press into a greased nine inch pan and bake for 20-25 minutes, or until golden.
To make the filling, whisk together the granulated sugar and flour in a bowl. Add the eggs, one at a time, whisking well after each addition. Add the zest, lime juice and enough green food coloring to produce desired green color (but not enough to make your filling neon! watch out) and mix until everything is smooth and combined.
Pour filling over hot crust and return to oven to bake for another twenty minutes. When done, the filling will no longer jiggle. Let cool completely in the pan before slicing and dusting with powdered sugar.****************************************************************************

So we baked and danced in the kitchen, and had a couple of glasses of wine, while the kids played with playdough(note to self  never leave the children unattended with playdough!!)They did make some lovely things, but I'm not so sure if it will come out of the carpet ! It did keep them quiet though...... for awhile!

In the end we all had a good time, good company, baked goods, and wine, it doesn't get any better!!
I haven't iced the cupcakes yet, so will update with finished product. In the mean time, I have to go wash some playdough out of some monkey's hair, and start getting ready for the party! Can't wait to see everyone!!

UPDATE: There is no update!!!!! Thanks to my cousin S.S. i was having a great time and got distracted, and FORGOT to take a picture of the cupcakes!!!!!!Oh well we had a blast and the cupcakes looked pretty and tasted delicious, there were none left at the end of the night!!!

    I think the lime squares are divine! It seems like I missed out on an awesome day.
