A Celebration

Hello everyone, i`ve been M.I.A, but for a good cause. I have been planning my daughters baptism. In between party prep,we had an extreme weather warning, final bridesmaid dress fittings,C had her last day of school, i had car troubles, and a sick baby who had fever for 4 days, which now turns out to be roseola.Fun times. But the party must go on, and besides the craziness in the days before, our sunday celebration went smoothly. A thank you to everyone who came and shared this special day with us!

Good company, good food, and great weather, how could you go wrong with that combination!

I made a delicious vanilla cake, but because of the heat we had (with humidity, it felt like 45c)the icing was just melting and sliding off the cake, so i had a genius idea, and put lace and ribbon around the cake to hide the bald spots and to hold up the icing, the end result was really nice!

Also on the dessert menu, meringues.Light, fluffy, delicious, and really easy to make.

This recipe takes only 2 egg whites, 7 tablespoons of super fine sugar, a pinch of salt and 1/4 teaspoon of vanilla extract. In a mixer, beat egg whites until starts to form peaks, add sugar 1 tblsp at a time, add salt and vanilla. bake at 200c for 3 hours.

I can hardly believe that it`s over.But there is no rest for the weary, as the bachelorette is in 3 days and the wedding in 10. All the little details and last minute prep must get done, with appointments left right and center, and out of town guests starting to arrive as early as this weekend, i will again be M.I.A! As much as i am so excited for this day to come, and be with friends and family and having a blast, celebrating my sister and brother in law, i can`t wait until it`s all over, and enjoy the summer vacation with the monkeys, and just hang out!!

But for now, i am still in recovery mode, and plan on doing NOTHING today, maybe watch some movies with the girls on this rainy day!
